Baked Stuffed Sweet Potato

The sweet potato is halved, baked, hollowed, stuffed and then baked again for an easy, hearty and healthy dish. This recipe has marinara and pepper jack cheese, but feel free to use pesto, mozzarella, parmesan or whatever your heart desires.

Hands off: 1 hr
Ingredients:
1 large sweet potato
2 tbsp olive oil
Seasoning of choice (Slap Ya Mama)
1/2 cup pepper jack cheese, shredded
1/2 cup marinara sauce
Cooking:
Preheat oven to 400 degrees F.
Line an oven safe pan or baking sheet with tin foil.
Wash sweet potato. Cut in half lengthwise and brush with olive oil, thinly coating all of the potato halves. You want it to shiny but not dripping.
Sprinkle 1-2 tsp of seasoning of choice over the cut sides and place face down on the tin foil.
Bake for 40 minutes.
Remove sweet potatoes from oven and let rest for five minutes. Using a spoon, scoop out about 1/4 of the sweet potato meat and set aside.
Pour about 1/4 cup marinara into the shallow lakes you created in the sweet potatoes.
Top the marinara with shredded cheese.
Return to oven and bake cheese side up for additional 15 minutes.
Let rest 5 minutes before serving.
Scale recipe as needed for additional servings.
